How do backups and recovery work?

Automated daily backups at 02:00 plus on-demand snapshots before risky changes. Restores are tested regularly, a backup that was never restored is just a hope.
Backups are stored separately from production, versioned across multiple restore points and protected against tampering, which also covers the ransomware case. Twice a year we run a full restore drill and document how long recovery actually takes.
What happens when something goes down at 3 a.m.?
